Easy Egg Bites

These Easy Egg Bites are the answer to your breakfast prayers. They are so easy to do. No seriously, they are three ingredients and four steps. It doesn’t get easier than that. The better news is, they are also delicious. Your biggest problem will be making enough to please the crowd.

This recipe makes 12 eggs (about 6 servings), but you are free to make as many or as little as you like. All you will need is a Muffin Tin and some cooking spray and you are ready to go. Just like we told you, quick and easy.

This recipe details how to make the Easy Egg Bites with 3 ingredients, eggs, ham and cheese. However, you are also free to add anything you would like. You can throw in onions, peppers, or even sausage or chorizo. You can also use bacon instead of ham as the base. The world is your oyster here.

Just keep in mind that they are only baking in the oven for around 12 minutes. This means that things like onions, peppers or sausage all need to be cooked stove top before you add them into the egg bites. This will ensure everything will cook evenly.

Ingredients

  • 12 Eggs

  • 12 thin slices of ham

  • 1/2 cup of shredded cheese (we use a Mexican mix)

  • Salt and Pepper

  • Parsley (optional for garnish)

Directions

  • Preheat your oven to 350 and spray the muffin tin with cooking spray
  • Line each hole with the ham and sprinkle a little cheese into each hole.
  • Crack an egg over the cheese and sprinkle with salt and pepper
  • Put in the oven for 12-15 minutes depending how cooked you like your egg. Sprinkle with a little pepper and parsley for garnish
