Leeks, or puerros, are this incredible super food. If onions and garlic got together to have a baby, it would be a leek. So basically they are a star ingredient. Leeks are packed with vitamins including A, C, K, folate, and iron. This means that they support bone health and immunity.
Leeks happen to go perfectly with potatoes, so we thought that incorporating them into a hash was genius. Potatoes get a really bad wrap. However they can actually be very good for you. Potatoes are high in Vitamins C and B, and can be good for heart healthy and inflammation.
Besides being packed with veggies, this recipe is a one pot wonder dish that can be ready in under 40 minutes. The thing about eating healthy, especially during the week, is quick and easy. A one pot dish usually checks both boxes. It simplifies cooking, and also simplifies the cleaning.

This dish is Whole 30 approved! It’s hearty and healthy, and absolutely delicious.
To keep it quick, preheat the oven to 400. Then season your potatoes, and put them on the top rack to start crisping up in the oven. Then you can move onto your leeks and ground turkey. By the time the leeks and turkey are ready, your potatoes will be ready to toss in.
Seasoning the turkey before adding it to the pan. This will help bring a little extra flavor to the dish.
Leeks are so delicious!!! We know that they are not a regular ingredient in most kitchens. However we insist that you give them a shot. Make sure you clean them very very well! Leeks can be a little dirty.
Some recipes only use parts of the leek, but here we are using the whole thing. That means you are slicing it from the firmer whites the leafy green.
Leeks need a little more time than the regular onion. They are going to be sauteed and then a little time to steam so they can really cook through.

Turkey Leeks and Potato Hash

1 lb ground turkey
1 potato diced into small cubes
3 leeks
1 cup spinach
3 cloves garlic minced
2 tsp garlic powder (separated)
2 tsp paprika (separated)
2 tsp oregano (separated)
Fresh or Dried Parsley for garnish
Salt and Pepper to taste
2 tbsp olive oil
Directions
- Preheat oven to 400 degrees. Season your potatoes with a little olive oil, half the garlic powder, paprika and oregano and bake for 20-25 minutes. Move them around half way through to make sure they cook evenly and get crispy.
- Season the ground turkey with your seasonings and set aside.
- Bring your pan to medium high heat and throw in your leeks. Saute them until they begin to soften.
- Add in your garlic and cook it for 1-2 minutes until just slightly golden.
- Throw in your seasoned ground turkey, and mix into the leeks and garlic. Leave the heat on medium high, and break up the turkey as much as you can. Sometimes it is good to get little bits of the turkey crispy.
- Once the potatoes are ready, add them into your pan and mix in.
- Add in your spinach and give it another mix. Sprinkle a little bit of the parsley, lower the heat and let it all simmer for about 10 minutes.
- Serve with fresh parsley over more spinach or alone! Enjoy!
