These 10 Instant Pot Recipes are a great roundup of meals that are not only delicious but so easy to do. They are the perfect for weekday meal planning, as they keep things simple. We love meals that you can set and forget while you move on to do other things.
We are huge Instant Pot fans over here. As two moms, our weekdays are very busy. Between work, picking up the kids at school, and taking them to their activities it doesn’t leave a lot of time for elaborate meals.
The Instant Pot allows us to make a meal that feels like we worked on it all day, but it only took minutes to do. It allows us to have a healthy meal ready to go at home, without stress. No more ordering food or doing fast food pick ups. We can set the Instant Pot with whatever recipe we pick that day, and know that when we get home from soccer or baseball practice that we can focus on the other things we have to do (homework, bath time etc).
Why Get An Instant Pot
An Instant Pot is essentially a slow cooker, but with a few added functions that actually make it extremely versatile and practical. First, unlike a slow cooker, the Instant Pot also has the ability to pressure cook your food. The pressure cooking is what allows you to make a meal that is injected with so much flavor people will think you worked on it all day. The pressure cooking function also allows you to make something quickly when you get home, on the days where you aren’t able to set it before you leave for work.
We know historically that pressure cookers seem scary. However the Instant Pot has made it so that it is idiot proof. This is not the traditional pressure cooker that your Abuela or mom had in her kitchen. They have made it much safer and easier to use. You just have to make sure that the valve on top is set to “Seal” and it’s good to go.
The Instant Pot also has the ability to saute the food in the same pot. There are recipes that call for this prior to placing it in the slow cooker, and it’s always been such a pain to dirty another pan or have to go through the process of transferring. Now you can just saute the food in the pot before setting it to cook.

Instant Pot: Ajiaco
This Instant Pot Sancocho/Ajiaco Recipe is somewhere between Puerto Rico’s Sancocho and Cuba’s Ajiaco.
