What Are White Sweet Potatoes
White sweet potatoes are very similar to the classic, but have a white flesh and a drier texture. They have a mild flavor with a subtle nutty undertone, and are a good source of nutrition as they are high in Vitamin A, C and E. There are many ways to prepare them such as baking grilling or mashing, but we really love to roast them.
White sweet potatoes are slightly sweet and have an underlying unique flavor of warm spices like nutmeg and roasting them really brings out that flavor. They are so starchy that they tend to crumble. They are mild unlike traditional sweet potatoes and have a delicate pale yellow hue. Their skin is soft so for most recipes we don’t even bother peeling them.
In this recipe, the salty miso and floral honey perfectly coat these potatoes to enhance their natural sweetness. A hearty amount of green onions are the perfect topping. Every bite is addicting.
Some Tips for Roasting White Sweet Potatoes
If you can’t find white sweet potatoes, you can use Japanese sweet potatoes, purple sweet potatoes or traditional orange sweet potatoes.

Roasted white sweet potatoes

3 large white sweet potatoes halved lengthwise
5 tablespoons unsalted butter, softened at room temperature
3 tablespoons light white miso paste, at room temperature
2 tablespoons of honey
Salt and freshly cracked pepper
2 tablespoons fresh scallions, finely chopped
Directions
- Preheat the oven to 400 degrees.
- In a bowl mix together the butter, miso and honey. Whisk and set aside.
- Prepare a sheet pan with parchment paper or a silpat mat. Add the sweet potato and brush with the miso butter all over so they are completely coated.
- Sprinkle with salt and freshly cracked pepper. Place the sweet potatoes with the flat side down.
- Roast for 30 minutes, then pierce them with a fork to be sure they have softened. They may need another 10 minutes to cook completely and become more golden brown. If you want the edges to crisp up more, set them under the broiler for 2-3 minutes.
- Serve on a platter and garnish with the scallions. Serve hot.
