First, it goes without saying that anything done in the Instant Pot is going to be a winner. It’s easy and helps you pack so much flavor into food very quickly. However we would tell you that you should make this Carrot Ginger Soup Recipe as soon as possible because it’s just so good for you, and somehow very delicious.
Carrots are actually very very good for you. We thought this was just something our parents used to tell us at the dinner table, but carrots have several healthy benefits. First they are packed with beta-carotene which helps keep your eyes safe from UV light. They have antioxidants, Vitamin K, Vitamin C, calcium, a ton of fiber, and more which all help keep your immunity up, blood pressure low and keep you feeling full.
Then you add in the ginger, onion, and garlic and you have brought together some of the best anti-inflammatory ingredients one can find. The combination makes this soup an absolute addition into your weekly routine. It has such a great taste, as the ginger is balanced out by the sweetness of the carrots.
Finally this recipe is vegan. The soup is naturally thick from the carrots, and while you can still add a little cream or coconut milk if you like to add thickness, it is not necessary.
Our Tips for Making this Instant Pot Carrot Ginger Soup
First we would say to get an Instant Pot if you don’t already have one. We both have THIS one and it’s been incredible.
Remember to keep your carrots uniform. This just helps everything cook at the same rate. This applies to the carrots and onions.
We added half a grated zucchini into the recipe, because we had it at home one day and threw it in and you could not taste it. So we figured why not add more veggies if we can!
We recommend mashing the garlic a little before throwing it in, because it helps open up the flavor.
The recipe calls for less than a tablespoon of butter before blending it. Do not freak out, it is not required. The soup will be just fine without it, but the little extra fat adds a little creaminess and makes it more filling (in our opinion).
If you want to use something else to thicken up the soup, you can use coconut milk or a little cream. You could also top it with a little creme fraiche if you’re feeling fancy.

- Stove Top Instructions: place all the ingredients in a pot, bring to a boil and simmer for a minimum of 30 minutes or until the vegetables are fork tender. Drain the liquid into a measure cup and begin to blend it to your desired thickness.

2 lbs carrots, peeled and cut into chunks
1 large yellow onion, cut into chunks
5 cloves of garlic mashed
1/2 a zucchini peeled and grated (zucchini is optional)
2 1/2 cups of vegetable broth
1/2 teaspoon of agave or honey
2 inches of fresh ginger grated
1 teaspoon cumin
1/2 tbsp unsalted butter (optional)
Salt to taste
Pepper to taste
Garnish with fresh parsley or chives
Directions
- Throw your carrots, onions, garlic, zucchini (if using), and ginger into the Instant Pot. Cover everything with broth (if you need more use more if you need less use less). Then season with salt, pepper, cumin and the honey.
- Close the Instant Pot and press the Soup Function, or High Pressure for 30 minutes.
- Once it is done, you can release the valve or let it slow release and get to it when you are ready. Drain the vegetables, and set the liquid aside.
- Place the vegetables either back into the Instant Pot or a bowl. Use an immersion blender to begin blending the soup, slowly adding the liquid back in. At this point you would add your butter (if you would like it is not required or anything you wanted to use to thicken it up). You should use almost all the liquid by the end, but you should put as much or as little as you like depending on the thickness you prefer.
- Garnish it with chives or parsley and add a little goat cheese crumble or creme fraiche if you like. However we strongly encourage a little Momofuku Spicy Chili Crunch to be drizzled. Enjoy!
