We love this recipe because the baked brie recipe allows the cheese to shine. The addition of pomegranate seeds and thyme add a flavorful and festive touch.
How to Make This Baked Brie Recipe
To start, we score the top of the brie so all those flavors meld into the cheese. The combination of the melted cheese and the texture combination of the velvety cheese with crunchy nuts and pomegranate seeds is heavenly.
It is important to line the pan with parchment paper. This ensures the brie won’t stick to the pan. It also allows you to serve it where you cooked it or you can move the brie easily by simply lifting the parchment paper. It’s also very easy clean up.
You want to bake the brie the brie when you are ready to serve it. Ideally it is baked just enough to melt the inside but maintains its shape. Once you pull it out of the oven give it 5-10 minutes to cool. If the brie oozes while it’s baking that’s ok too. It will be equally delicious.

1 8.5 oz wheel of Brie
1 tablespoon of honey
1 cup of salted marcona almonds, roughly chopped
1 sprig of thyme leaves, leaves removed from the stem
¼ cup pomegranate seeds
Directions
- Preheat the oven to 375 degrees.
- Line a cast iron skillet or an oven safe pan with parchment paper.
- Place the brie on top of the parchment paper Score the top of the brie by making superficial slits in both directions on the top portion of the brie. Be sure not to slice it all the way through.
- Spread the honey on the top of the cheese. Then top with the almonds, thyme leaves and pomegranate seeds.
- Bake for 12-15 minutes. Allow it to cool for 5-10 minutes.
