This Banana Bread Recipe is born from the need of turning overripe bananas into something that everyone will love. It takes a few ingredients and a little bit of time but we promise you can turn those rotting bananas into something delicious in under 45 minutes!

Tips for Easy Banana Bread

Our biggest and best tip here is the riper the better! If it looks black and like it may be poisonous, we want it! Those are the bananas that are going to naturally sweeten your bread!

This recipe makes enough for 1 loaf or about 12 muffins. To make that you need at least 3-4 larger bananas and 4-5 smaller ones.

If you find yourself with less than that like 2 horribly black bananas, you can do two things. One, freeze them like that and wait for a few more bananas to go “too ripe”. You can also try cutting the ingredients in half and making a couple muffins. Play around with it.

In his recipe we call for a 11 x 5 loaf pan, but it’s fine if you have something smaller or larger– just increase /decrease the cook time by a few minutes. 

If you can remember to take your butter out an hour or so before baking it will help bring the butter to room temperature which is much easier to cream.

Ingredients

  • 2 1/2 cups of Mashed Bananas (about 3-4 bananas)

  • 2 cups flour

  • 3/4 cup brown sugar

  • 1/2 cup butter (1 stick at room temperature)

  • 1 tsp baking soda

  • A pinch of salt

  • 1 tbsp vanilla extract

  • 2 eggs beaten

  • 1 11 x 5 loaf pan or muffin tin

Directions

  • Preheat the oven to 350
  • In a medium bowl, combine most of your dry ingredients: flour, baking soda and salt. Set aside.
  • In a bigger bowl, add your brown sugar vanilla extract, and butter and mix them until they are smooth and creamy.
  • Add the beaten eggs and mashed bananas to your creamy mixture and blend well.
  • Then add your flour mixture into your creamy mixture and mix until everything is combined.
  • Transfer your banana batter into the pan. Bake on a middle rack for 25-30 minutes.
  • Check in on your banana bread, if you can stick a tooth pick in the middle and it is mostly dry, take her out. If not let her bake another 5-10 minutes depending on the size of your pan.
  • Remove her and let it stand in the pan for 10 minutes, then flip her onto a wire rack to finish cooling another 10 minutes or so.
