Why Make This Instant Pot Skirt Steak Recipe
If you have been on this blog before, than you know we are in a long standing deep love affair with the Instant Pot. It’s a tool that does the work of many other appliances, and can make almost anything taste like you worked on it all day. We use it in our kitchens all the time and highly suggest to have one.
Another reason to make this recipe, is the skirt steak. Skirt steak is one of our favorite cuts of meat, and in this recipe it takes on a whole new life. The instant pot works it’s magic. When you open it up, you will find the skirt steak melts in your mouth, the onions become part of the sauce and the potatoes and vegetables absorb all that flavor.
This recipe is remarkably easy with minimal prep. The only thing you need to prep is a sliced onion and cleaning the vegetables. That’s it. Every other ingredient was strategically chosen because you don’t need to chop, mince or slice. The pearl onions from a bag can be plopped in along with the green onions that are left whole. Even the green beans are a vegetable that doesn’t need to be chopped. It’s almost as simple as throwing a steak on the grill.
How to cook Skirt Steak in the Instant Pot
Skirt steak is such a great cut! It works perfectly for a variety of dishes. It works in tacos, stir fry, sandwiches, salads, and even with just a side of vegetables. Essentially, it works anywhere you might want thin slices of steak.
Typically, skirt steak is cooked on a grill or in a cast iron pan. It cooks relatively quick and is really tender and juicy. In this recipe we are keeping her tender and juicy. First we are seasoning, then braising in a pressure cooker. The Instant Pot makes it taste like a beef stew that has been cooking for hours, but in reality it cooks in 30 minutes from start to finish.
It doesn’t need much time. Remember that the skirt steak is already tender. This is why in the Instant Pot it does not need a lot of time. We are only going to pressure cook it for 20 minutes, because anything more would leave it almost too tender (depending what you’re looking for). Remember as meat pressure cooks, it really helps break down the muscle fibers. This recipe is going to leave the skirt steak spectacularly soft and tender. Everyone is going to love it.
Our Tips for Making this Instant Pot Skirt Steak
- CAN YOU SUBSTITUTE THE CUT OF MEAT- YES! – Skirt Steak can be expensive. We’ve tried this recipe with flank steak or “vacio” and it works well. Just give it an extra 5 minutes in the pressure cooker because this cut has a little less fat and tends to be thicker.
- Vino seco vs Wine– If you don’t have a good bottle of vino seco you can always substitute with wine. If you don’t have either, you can substitute with a tablespoon of vinegar or skip it all together.
- Veggies – If you don’t love green beans you can substitute with another vegetable. Since we don’t add the veggies until after the meat has been pressure cooked it should be a vegetable that cooks quickly. Zucchini, yellow squash, kale and peas will all work well.
- Thickening the sauce: If you want the sauce to be thick like a gravy you can add cornstarch. Once the pressure cooker releases the steam, you can dissolve a tablespoon of cornstarch with the cooking liquid. Add it to the instant pot and set to the sauté setting for 5 minutes. The sauce will thicken and be ready to serve.

3 pounds of skirt steak (cut into 5 to 6-inch strips)
12 oz of baby potatoes, cleaned and left whole
12 green onions, cleaned, trimmed and cut into large 3-inch pieces
10 oz green beans, washed and trimmed
1 onion, finely sliced
14 oz of frozen pearl onions
2 cups of beef or chicken broth
2 tablespoons of tomato paste
¼ cup of white wine or vino seco
2 sprigs of rosemary left whole
2 teaspoons of steak seasoning or sazon
1 teaspoon of salt and freshly cracked pepper
1 teaspoon of garlic powder
¼ cup of parsley, finely chopped
Directions
- In a large measuring cup or bowl add the broth, tomato paste, ¼ teaspoon of salt and wine. Whisk together. Set aside.
- Season the skirt steak on both sides with the salt, garlic powder and your seasoning of choice then add into the Instant Pot.
- Next finish adding your ingredients to the Instant Pot. Add the sliced onions, green onions, pearl onions, rosemary and potatoes. Then add the liquid mixture that was set to the side. Seal the Instant Pot and set to the “high pressure” setting for 20 minutes.
- Once the time is up you can allow it to naturally release or press the “quick release” button. When you are ready, remove the top and mix in the green beans and parsley into the pot. The green beans will cook with the residual heat.
- Check for seasoning and adjust as necessary. If the sauce is thin, see the “substitutions and adjustments” section above. Sprinkle with chopped parsley.
