Instant Pot Chicken
Instant Pot Chicken is a staple in both of our houses. The Instant Pot, and it’s unique ability to take the load off, is very much appreciated in our houses. There are many ways the Instant Pot can bring order into your home. First, it is something you can set (easily) in the morning before work, and return home to a pretty complete meal. Second, even if you do it when you get home, it will still be ready for you under 40 minutes, and you would not have to give it any attention.
As we mention in the recipe, you can do this with boneless/skinless breast or boneless/skinless dark meat but we would recommend using both. Our biggest tip would be to do extra chicken, because it is the perfect chicken to have on hand all week for leftover salads, sandwiches or tacos.
Air Fryer Pollo Empanizado
Our Air Fryer Pollo Empanizado is a little healthy twist on a classic Cuban dish. It’s all the good fried flavor of a Pollo Empanizado but done quicker, easier and with a lot less grease.
We love this for a weekday dinner, because it is fast and the kids absolutely love it. Add a little lime to get that perfect hit of childhood and you will also be in love with this dish.

Alita’s Roasted Chicken
We know that when you look at a roasted whole chicken, it can be intimidating. Trust me, we know the feeling. However we are here to tell you, YOU CAN DO IT! We have a whole video to walk you through on our Instagram, but even without it, our Alita’s Roasted Chicken Recipe can guide you.
We know that this is more time consuming than you may want on a weekday, but it’s worth the commitment. First, the chicken does not take as long as you think. Second you can put vegetables on the bottom of the pan and hit two birds with one stone. Third, whole chicken is much cheaper to purchase than pieces, and if you have little mouths to feed this is crucial to the weekly food budget. Finally, there are always leftovers which we know is gold when you don’t want to cook every day.

This recipe is a great solution to your weeknight dinners stress. It not only comes together quickly and brings a delicious meal to the table, but it is even easier to clean. The mess is all in one place, and you can literally put that baby in the dishwasher and call it a night.
We love this recipe so much because it is hearty but healthy. The chicken cooks along with some great veggies that can really be a whole meal. You may need to make some rice or pasta to go on the side, but it’s really a no fuss meal that everyone will love.
Easy Weeknight Roast Chicken
We love this Weeknight Roast Chicken. It has it’s name for a reason. This is something Cristy has made in her house every week for almost a decade, without complaint. You read that correctly, no one has ever complained about this chicken. In fact there are requests for it. We share it with you because everyone needs a recipe that is so easy, it’s embarrassing, that all the kids love.
This Easy Roast Chicken has it’s name for a reason. It is zero prep. You take the chicken out of the packaging and throw it into the pan. Then you season it with 5 things: salt, pepper, garlic powder, onion powder and a little bit of extra virgin olive oil. That is it. It bakes for 60-75 minutes depending on how many chickens and you have yourself a meal. We suggest roasting a vegetable while the chicken roasts and serving it over The Perfect White Rice. This is actually the best part, the salsita this chicken makes, it’s liquid gold, that just pours perfectly over the rice.
Cauliflower Arroz con Pollo
This Cauliflower Arroz con Pollo Recipe is the answer to your carb loving prayers. There are a few reasons to love this recipe. First it has all the flavors you love from a traditional Arroz con Pollo. This means that you still have all the sofrito goodness you are craving, but instead of rice we are subbing in cauliflower rice. This not only makes it a little healthier but it also allows it to come together much faster. Cauliflower rice is great because it takes on the flavor of the food it is mixed with and also cooks very very fast. This is a great weekday recipe!

Pollo a la Plancha is a classic for a reason. It is a recipe that is truly so easy to do, but is always delicious because the flavors are impossible to mess up. The trick to making the perfect Pollo a la Plancha can be found in our recipe, but to give you a hint it really comes down to having the right heat on the pan for the sear and having a mountain of onions.
