Roasting cauliflower at high heat completely transforms it. The edges become deeply browned and slightly crisp while the inside stays tender. We season the florets simply with turmeric before roasting, then add the olive and caper topping after they come out of the oven.

Tips for the best roasted cauliflower:

Dry your cauliflower well. After washing the florets, make sure they’re completely dry. Excess moisture creates steam, which makes it harder for the cauliflower to caramelize.

Don’t overcrowd the pan. Give the florets some room. If they’re packed too tightly together, they’ll steam instead of roast and you won’t get those deeply browned, crispy edges.

Don’t be afraid of seasoning. Cauliflower takes on whatever flavors you give it. We use turmeric here, but paprika or cumin are great ways to change things up.

Give them a flip if needed. If the cauliflower isn’t browning evenly, shake the pan or turn the florets halfway through cooking so another side gets direct contact with the hot sheet pan.

Why isn’t my roasted cauliflower crispy?
Usually moisture or overcrowding. Dry the cauliflower thoroughly and leave enough space between the florets so they roast instead of steam.
Can I make roasted cauliflower ahead of time?
You can, but it will have the best texture straight from the oven. If making it ahead, I’d keep the topping separate and reheat the cauliflower in the oven before serving.
How do I store leftover roasted cauliflower?
Refrigerate it in an airtight container, then reheat in the oven or air fryer rather than the microwave if you want to bring back some of those crispy edges.

32 oz fresh cauliflower florets (about 2 medium heads), cut into bite-sized pieces

1/3 cup extra virgin olive oil

1/4 – 1/2 teaspoon ground turmeric

Kosher salt and freshly cracked black pepper, to taste
- Herb Topping

1/3 cup great quality extra virgin olive oil

1/4 cup fresh flat-leaf parsley, finely chopped

1/4 cup pitted Castelvetrano olives roughly chopped or sliced

1 tablespoon golden raisins

1/2 tablespoon capers, drained and coarsely chopped

1/4 teaspoon kosher salt and freshly cracked pepper

Juice of half a lemon
Directions
- Preheat your oven to 400 degrees. Line a large baking sheet with parchment paper and place the cauliflower florets evenly over the sheet.
- Pour the oil over the cauliflower and toss so that it is completely coated. Sprinkle with the turmeric, salt, and black pepper. Toss well.
- Spread the florets into a single layer with flat sides facing down. Roast for 30 minutes, flipping halfway.
- While the cauliflower is roasting make the herb topping by combining all the ingredients well in a bowl.
Transfer the roasted cauliflower directly to a serving platter and spoon the herb topping all over.
