Our May Newsletter is going to walk you through all your May events with easy to follow recipes that keep things low stress so you can enjoy your day.
For parents, there is something about May that has a December vibe. There are a million things to do before the end of the school year, and not a lot of time to get them done.
We have sporting events, award assemblies, birthdays, graduations, not to mention, there is Cinco de Mayo, Mother’s Day and Memorial Day. It is a cluster. A perfect storm of events that is enough to make anyone absolutely dizzy. It’s basically December level stress without the joy, red and green and coquito.
We are not just here to state the obvious and pile onto your stress. We are here to hopefully give you a few good food ideas to keep things easy in the kitchen during the week and make celebrating these milestones and holidays a breeze.
So what is our big idea to help keep things simple? Shrimp!
We are serious! Shrimp are the unsung heroes of the kitchen. They are easy to prep, easy to cook, and delicious to eat. They can be in a salad, in a taco, with rice, or even just alone. They are tasty and versatile, and we are going to give you plenty of ideas to keep it fresh.
Don’t worry we also have plenty of desserts to look at, after all with all the calories you are saving with shrimp you need something to balance it out with!
Mother’s Day
Mother’s Day is always tricky. Most of us are mothers, and we really want to keep the day as a time for rest and to enjoy our families. However, as we know, this is a rare occurrence. We have our own mothers, Mother In Law and our Abuelitas (if you are lucky) to celebrate.
We wanted to bring you a few options that are make ahead or very simple so that you can at least enjoy your day as much as possible.

Recipe of the Month
Our Camarones Enchilados is the recipe of the month. As we mentioned above, we really feel like Camarones (shrimp) are very overlooked. Shrimp are so healthy for you. They are packed with vitamins and omegas that are hard to find in other proteins.
There could be a misconception that they are difficult to prep or clean. However you can buy them deveined and ready to cook. With just a simple seasoning they really cook up so quickly, which is key to quick weeknight dinner.
If you are not into our Camarones Enchilados, you can also try some of our other favorite shrimp dishes: Camarones Al Ajillo, Shrimp Salad, Shrimp Ceviche Verde, Sheet Pan: Shrimp Fajitas, Cauliflower Rice with Shrimp, Shrimp and Beef Skewers, and of course our Paella.
Cinco de Mayo Inspired Dishes
Cinco de May was just here! It’s always the perfect excuse for tacos and margaritas! Here are a few of our favorite Cinco De Mayo inspired dishes to keep you feeling festive all month long.
Obviously, since we have decided Shrimp are the ingredient of the month, we have plenty of recipes to highlight them. We love to keep it simple without sacrificing any flavor!

Our Favorite Places to Eat Shrimp:
- La Camaronera: must try the shrimp empanada
- Mignonette: the popcorn shrimp with their creamy tarter sauce.
- Salmon Salmon: the jalea mixta or shrimp causa are perfect Peruvian shrimp dishes.
- Mesa Mesa: rock shrimp are tossed in a yummy pink sauce that’s slightly spicy and so addicting
- Casa Juancho: the camarones al ajillo is the perfect dish for appetizer or main course. Ask for a side of bread to dip into the buttery a shrimp goodness! –
