There are a few reasons we think you should be making this recipe. First, it’s a sheet pan meal, and what do we know about sheet pan meals? They are always easy! Score one for the good guys here because this recipe is an easy to do miracle, that is delicious and even easier to clean!
The second and very important reason to make this is, leeks! Just as everything Oprah touches turns to gold. Everything a leek touches, turns tasty. Yes, even basic chicken and watery mushrooms become next level when the leeks lend their onion/garlic flavor. Leeks improve anything they are cooked with. Once leeks cook, they melt down just as onions do, forming their own sauce, and that magic lends itself to take any recipe to the next level.

The truth is chicken thighs are so easy to work with in the kitchen, because they cook quick and will stay juicy.
I make this recipe or a version of this recipe at least once a week. It’s perfect for leftovers because the chicken is as moist the next day chopped up over rice or over greens. If I switch up the veggies I will almost always keep the leeks because they add so much flavor and body to the dish.

Our Tips for Making Baked Chicken Thighs with Mushrooms and Leeks
This recipe must be made using a sheet pan! It’s important to cook this recipe in a sheet pan, which isn’t too deep and has a short rim. This will allow the mushrooms and leeks to cook until tender but also become golden brown. If you cook this recipe in a casserole dish the mushrooms tend to release a lot of liquid and may steam. It will still be delicious but it won’t have that deep roasted flavor you want for the veggies.
The recipe calls for mushrooms, and we personally suggest using shitake or cremini. However if you have baby bella or something else on hand- go for it!
Remember to really clean your leeks! Leeks are delicious but can be dirty, make sure to slice them thin, and soak them in a bowl of water to help that dirt come off and sink to bottom. Then just scoop them out and dry them before cooking.
Serving your chicken thighs: Like most sheet pan meals, this dish is basically a complete dish. You can serve it with something light like a Salad or carbs for something more filling and to soak up all the juices from the chicken such as Roasted White Sweet Potatoes , White Rice , Creamy Orzo .

Baked Chicken Thighs with Mushrooms and Leeks

6 chicken boneless skinless chicken thighs (about 2 pounds)
4 cups of mushrooms, sliced (we prefer shitake or crimini)
2 leeks, thinly sliced, properly washed, rinsed and dried
6 tablespoons olive oil, divided
4 sprigs of rosemary
1 teaspoon paprika
1 1/2 teaspoon kosher salt
1 teaspoon onion powder
1 teaspoon garlic powder
Freshly cracked pepper
¼ cup of finely chopped parsley
Directions
- Preheat oven to 400 degrees.
- Line a sheet pan with parchment paper. Then add the leeks and mushrooms. Drizzle with 3 tablespoons of oil, salt and pepper. Mix together until everything is completely coated. Set aside.
- Place the chicken in a large bowl. Drizzle with the remaining oil and season with salt, pepper, paprika, onion powder and garlic powder. Mix together so each side of the chicken is properly coated.
- Arrange the chicken over the mushrooms and leeks. Spread them out as much as possible so they are flat. Tuck the rosemary sprigs into the chicken.
- Bake for 30 minutes until the chicken is golden and cooked through. If you want the chicken and mushrooms a little crispier, broil for 3-5 minutes on the middle rack.
- Sprinkle with parsley or another fresh herb.
