With a big matchup coming up between the Miami Hurricanes and the Indiana Hoosiers, rivalry is in the air. Fans are choosing sides, talking roots, and repping their teams with pride.
But in Cuban homes, rivalry doesn’t just live on the field. We love to bring it to the kitchen.
Because when it comes to Cuban comfort food, one debate always shows up right on time:
When Game Day Meets Cuban Kitchen Pride: Pan con bistec or pan con lechón?
The University of Miami facing off Indiana University in the 2026 National Championship is the matchup everyone is talking about. It’s a story of Miami vs Miami. The U’s coaching squad has deep Miami roots and is ready to face off The Hoosiers, whose QB is Fernando Mendoza, a local Miami boy making headlines for more than just his Heisman trophy win.
We can’t think of a better Miami matchup in our kitchen than two Miami Classics.
Pan con Lechon vs Pan con Bistec.
Pan con Bistec: Loud, Bold, and Classic
This is the sandwich the kidn of sandwich that doesn’t whisper. It announces itself! It is the perfect way to turn a simple, thin steak into a game day sandwich. Perfectly seasoned bistec is cooked together with onions until they are caramelized. Then it is tucked perfectly into Cuban bread, and topped with crispy potato sticks, tomatoes, lettuce and a touch of lime.
It’s messy in the best way, deeply satisfying, and forever tied to Miami lunch counters, late afternoons, and cravings that cannot be ignored. The sandwich you grab when you want something fast and bold. It’s street food energy. There’s cafecito energy. It’s a sandwich that shows up ready to win.
If Cuban food had a game-day hype man, this would be it.

Pan con Lechon
Pan con lechón plays a different game but it plays it very very well. This one is a crowd favorite, and it’s for a reason. Tender and flavorful pork is sandwiched between cuban bread. The meat cooks quickly in a pressure cooker but it is completely broken down and fork tender. It’s a messy and juicy bite. You can slow roast your pork in the oven, or make this in the pressure cooker or the slow cooker.
Slow-roasted pork, marinated with garlic, citrus, and spices until it’s impossibly tender. Then it is piled high on Cuban bread, often with mojo and onions. This sandwich is a classic slow song. It is all about patience, tradition, and family.
Pan con lechón is not something you do quick and fast. It is a Sunday food, a holiday food. The kind of sandwich that reminds you of gatherings, long conversations, and plates passed around the table.
It doesn’t rush because it doesn’t need to. It knows that it’s not the destination it’s the journey. However, and lucky for us, the destination is delicious!

The Real Cuban Rivalry
Here’s the truth: one isn’t better than the other. However everyone has a favorite.
Some swear by the bold, immediate payoff of pan con bistec. Others won’t hear a word against pan con lechón and its slow-roasted magic.
And just like any rivalry, it’s all love with a little whole lot of passion mixed in.
So as game day approaches, we’re asking the real question: Which side are you on?
If we had to pick a winner we are going with the Canes, we mean Pan con Lechon. You can make the pork in advance and let it hang out in an Instant Pot until you are ready to serve. The longer it sits, the more flavor it gets. However, you will never see us turn down any sandwich.
Here are some sides you can pair with either sandwich while you watch the big game.
