Our Tips for This Easy Weeknight Roast Chicken

This is the easiest recipe on the street but here are a few things to help you out, and also show you different ways you can make it your own.

The recipe calls for 8 chicken bone in thighs with skin. The reason it is with bone and skin, is to help keep this chicken juicy. Nobody likes dry chicken. However this is not a contract, you can use whatever chicken you would like. Just adjust the time accordingly.

  • Chicken Breasts: depending on thickness 30-45 minutes, flipping them in the middle
  • Quarter Legs: 1 hour and 20 minutes
  • Bone in Breast: (also highly recommended) 1 hour and 15-25 minutes (depending on your oven’s heat)

Feel free to add in any spices you love to use on top of the basic 4. A little sazon or paprika would be a great addition and would help give the chicken a beautiful brown color.

A good way to tell the chicken is done, the skin will turn crispy brown.

They can be meal prepped. Make them on the day you are making your meals, and then you can just reheat them the day of.

Ingredients

  • 8 chicken thighs (skin on)

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 tbsp sazon (try Our Sazon Recipe)

  • Salt & Pepper to taste

  • 2 tbsp extra virgin olive oil

Directions

  • Preheat oven to 350
  • Place your chicken into a baking dish.
  • The trick is to sprinkle each chicken with the spices well. Start with the salt. Sprinkle each chicken with salt. Do the same with the pepper, garlic and onion powder. Be sure to cover the entire skin, it will help the crisp factor.
  • Drizzle each chicken with a little olive oil.
  • Bake the chicken in the oven (uncovered) for an hour. If the heat in your oven is uneven make sure to rotate the chicken halfway through.
  • The chicken is usually done around 60-65 minutes. You will know they are ready when the skin is nice and crispy. Depending on how many chickens you are cooking (and your oven) it could be longer. The trick is that the skin will be crispy.
  • Take the chicken out, and let it rest for about 10-15 minutes.
  • Sprinkle with parsley (if on hand), serve with white rice and roasted vegetables.
