September lasted about 5 minutes, and now Halloween is just around the corner. These Halloween Recipes we will show you how to take a few of our favorite recipes and make them spooktakular. When we are done with you, you will be the Ghostess with the Mostess!! At least the hostess with the most deliciously spooky spread.

It’s always fun to get into the spirt of things (see what we did there). The most obvious way of course is decorations and costumes. However for us, the best way to get into any holiday is with food!

How to Roast a Pumpkin

First thing’s first, we start with a pumpkin. One of the centerpieces of Halloween. Pumpkins are good for much more than just carving, they are also very delicious. They are also so versatile, there are so many things you can do. Think about stuffed pumpkins, soup, casseroles, and of course pie.

The first step to most things pumpkin is roasting it. THIS post will show you how to do just that. We take you step by step to roasting this delicious goard, but be warned you may never be able to stop! (spoooooky voice)

Stuffed Pumpkin Peppers

These Jack-O-Lantern style peppers are the cutest dish on your Halloween table. Cut the top of an orange bell pepper and hallow it out. Then using a sharp knife, cut out the eyes, nose and mouth. Once you have that done you can follow the steps of our Stuffed Peppers recipe. Fill it with turkey picadillo, Shredded chicken or even Chaufa fried rice for a great side dish.

Mummy Brie

Our Halloween centric brie follows the same baking instructions as our Baked brie but the assembly is a little different. Cut a the puff pastry in ½-inch strips and layer them to form the face of a mummy. Once it’s out of the oven, make the eyes from olives and the mouth from fig or strawberry jam.

Antipasto Spooky Eyeballs

This recipe doesn’t exactly stem from our website, but it doesn’t get easier than this appetizer. Simply wrap a bocconcini mozzarella with salami, then prosciutto. Top with half an olive as an eye ball. It’s ok they don’t look perfect – its Halloween.

Merenguito Ghosts

This is one of our favorites!! If you are good with Merengue, then this one is for you. Follow our Merenguito recipe for this ghostly dessert. Once the merenguitos have cooled, they are ready to decorate. You can pipe frosting to make spooky faces or food safe decorating pens work as well.

Witches Cauldron Snack Board

A rack holding three black cauldrons is the perfect appetizer centerpiece for your Halloween table. We filled ours with Black bean dipGuacamole and Salsa. Our Buttermilk ranch and Avocado crema are other great options. You can also use store bought sauces and dips like hummus, french onion dip and tzatziki. We stuffed a hollowed out pumpkin with veggies and chips.

White Chocolate Ghosts

With only two ingredients (white chocolate and candy eyes) you can make the cutest Halloween treat. A silpat is key to be sure the chocolate doesnt stick once it sets. Our recipe has a few tips and tricks to make this a smooth activity to make with your kids.

Our Tips for Hosting Halloween

If you are hosting a Halloween themed party there are great dishes to pair with the appetizers we listed above. We love our Picadillo stuffed Pumpkin. The basic weekday picadillo becomes part of a very festive and impressive dish. You can stuff it with any of our picadillos but, the classic beef recipe compliments the sweet pumpkin perfectly. You can also fill it with Ropa Vieja

If you will be trick or treating, it’s always a good idea to have a filling and nutritious dinner ready to go. The kids can eat before they hit the streets or as soon as they get back. Any casserole that bakes in the oven will work or the Instant Pot will keep the meal warm.
