How to Prepare Fresh Guava
Guava is not very common. Naturally, this means that sometimes people don’t really know how to handle them. Here is how you handle your guava:
- Wash the fruit well: it’s important to clean them properly on the outside before you start anything else.
- Cut in half.
- Scoop out seeds: Although the seeds are edible they should be discarded for this type of recipe. You can strain the seeds using a fine mesh sieve.
- Dice.
- Save pulp for smoothies if desired: The pulp can be used for endless recipes even smoothies or just drinking it as a juice.

Our Tips for Making Fresh Salsa
- Fresh is Best! Whether you are making a classic salsa like our Tomato salsa or making this guava salsa or our Mango salsa the most important tip is to use the best fresh ingredients you can find.
- If the guavas are very small you will want to grab 3 or 4 If not 2 mediums should be good.
- You can use white guavas which are more commonly in season but the pink guavas give it that beautiful color. They both have the same flavor.
- If the guavas are very ripe, cut them a little bigger so they don’t turn into mush as the salsa sits and as you mix in all the ingredients.
- You can prepare the salsa a day before and keep it in the fridge but it tastes best the day you make it.

Fresh Guava Salsa

2 to 3 fresh pink guavas

One green onion, finely sliced

1 tablespoon of fresh cilantro, finally chopped

1 1/2 tablespoons of lime juice

1 tablespoon of extra-virgin olive oil

A quarter teaspoon of salt

3/4 cup chopped cucumber

Optional – 1 finely chopped Serrano chile or a few dashes of hot sauce
Directions
- Prep the guavas. Rinse and dry their guavas very well. Cut the guavas in half and scoop out the seeds. Discard. You will be left with clean pulp and the skin.

Chop the guavas into small bite-sized dice. It will be about 1 1/4 cups.
- Add the diced guava, cucumber, and all of the remaining ingredients into the mixing bowl. Mix together and taste to adjust seasoning if needed.
- If you’d like it a little spicy add a few dashes of hot sauce or half a Serrano.
Serve immediately or refrigerate for a couple hours.
