The beauty of a sheet pan recipe is that they are extremely easy to do, and even easier to clean. It’s a quick step by step, in assembling the ingredient list and then laying it on a sheet pan to roast. While it is roasting in the oven, there is time to put together a side or help a kid with homework. Once it is ready, serve it up, and you can peel the parchment paper or the silpat and your clean up is done.

We think shrimp are overlooked. The truth is, we could all afford adding more shrimp into our diets. Besides the fact that they are very quick and easy to make, shrimp are also very good for you.

Shrimp are low in calories, high in protein, and bring a ton of nutrients such as iodine and omega 3s and fatty acids into your diet. Don’t you love it when something as delicious as shrimp, also happens to be very good for you?

Sheet Pan: Shrimp Fajitas

Ingredients

  • 2 pounds of large shrimp, peeled and deveined 

  • 1 red pepper sliced

  • 1 zucchini, chopped

  • 1 yellow squash, chopped 

  • ¼ cup of olive oil

  • 1 teaspoon of salt and freshly cracked pepper

  • ¼ teaspoon of paprika

  • ½ teaspoon of garlic powder

  • 6 flour tortillas 

  • Garnish with cilantro and limes

Directions

  • Preheat oven to 450 degrees. 
  • Line a sheet pan with parchment paper. Place the shrimp and vegetables on top. Be sure everything fits in one layer so it can cook evenly. 
  • Drizzle the olive oil over the shrimp and veggies and toss. Add salt, pepper, paprika and garlic powder. Toss again so everything is completely coated.  
  • Place into oven on the top rack. Roast for 5 minutes. Shake the pan and move everything around. Broil for 3-4 minutes until the veggies are charred and the pink are pink and opaque. 
  • Transfer to a plate and serve hot with tortillas and any of your favorite garnishes.
