Why Do We Want to Make Healthy Meals Every January?
The holiday season has just passed. The strange two week period where calories don’t count, and we eat and drink our way through life. After weeks of holiday parties from Thanksgiving to Noche Buena and indulgent dinners, when January rolls around, everyone is ready for a restart. We wanted to help you create a meal plan that will get your year off on the right foot, and hopefully help you find recipes that you love so you can stick to it.
All of the recipes mentioned bellow and in the meal plan are healthy, but still hearty. They are loaded with veggies, but you can also take some of our classic and traditional recipes and add a lot of healthy things to them.
Some Tips to Help You Make Your Healthy Meal Plan for 2025
As we stress in our Back to School Meal Plan, our biggest tips are to keep things simple, find ways to maximize your time, and when you look at the menu we set forth don’t be scared to mix and match for things you know you and your family would enjoy.
We find that a plan is essential, because it means that you don’t have to think or make decisions the rest of the week. That is why we stress that if you don’t love this specific plan, we have a lot of other suggestions for you to sub out. A plan is only as good as it’s results, and we want you to be successful here.
Healthy Meal Plan for 2025 Food Tips
Zucchini
Add zucchini whenever possible. Zucchini has this amazing ability to blend into it’s surroundings and go undetected. We love to add shredded zucchini into Turkey Picadillo, Carne con Papas and Boliche.
Speaking of zucchini, knowing how to prep and cook Zoodles is a great way to add a healthy and filling ingredient to your nightly routine, and replace the heavy carby options. They can be topped with Cuban Meatballs, Cuban Picadillo or Instant Pot Ropa Vieja. We have a great video on zoodles on our Instagram! You can find it HERE.
Cauliflower
Cauliflower is the star of healthy food! It’s so versatile and there are so many ways to incorporate it. We love our Cauliflower and Tumeric Soup, besides being an Instant Pot darling, it’s also loaded with things that are so good for you. Riced cauliflower and other riced vegetables are great to swap out when a recipe uses white rice, but still maintains the amazing flavor. Try it with our Cauliflower Arroz Con Pollo and Cauliflower Rice with Shrimp. If you really love this idea you can sub cauliflower for our Arroz Chaufa or Arroz Chino as well.
Sheet Pan Recipes
Sheet Pan Recipes save lives when you are trying to eat healthy and still not fuss over your meal. The prep for sheet pan meals is easy and the clean up is even easier. We included a few of our favorite sheet pan recipes in our meal plan but here are a few more favorites: Sheet Pan Chipotle Salmon, Sheet Pan Confetti Fish, Sheet Pan Beef Ribs and Sheet Pan Lemon Pepper Fish.
Extra Veggies Never Hurt Anyone
Serving our favorite meal with a healthy side always makes us feel good too. Some of our favorite sides are Roasted Vegetables, Cauliflower Steaks and Delicata Squash.
When you are using a lot of vegetables it’s great to have them cleaned and prepped as soon as you buy them. Many vegetables can even be chopped or sliced a couple of days before.Sundays are a great day to start some prep. But it’s not necessary. None of the meals will take longer than 45 to 60 minutes. Once you have a plan, it’s easier to stick to it and prioritize healthy options.
Freeze Your Soups!
We have a few soups available in our plans. The truth is soup is a great way to stay light and healthy, but most times we have a ton leftover. We can use that as lunch the next day, but also don’t be scared to freeze leftovers for easy lunch of dinner in the future. Soups in the freezer stay good for up to 3 months. We love to use THIS amazing soup holder that makes it even easier, but you can also always just use a freezer safe ziplock bag.
